First of all I am not a Chef, however I like to dabble in the kitchen and since it's well past soup weather, I thought I'd make one of my favorites, Poblano Chowder! There are variations of this recipe on the internet, I took some ideas from several of them. First I started off with 5 large Poblano's.
I roast them at 450 degrees for about 25 minutes. I usually don't put oil on them, however I understand that it is an option.
While that is roasting, I start to dice an onion and mince 3 cloves of Garlic. I call this Vader's Poblano Chowder for 2 reasons.
I'm a Star Wars Fan
I use a Darth Vader Instapot I purchased at Williams and Sonoma
I turn on the instapot on Sauté and start to sweat the onions and garlic in 1 tsp of Butter. I then use 2 table spoons of cumin and pepper and then add 4 cups of vegetable broth and 1 1/2 cup of heavy cream.
I let that simmer as I peel
and dice the poblanos
I add that to the soup and pressure cook for 4 minutes. I then release the steam and open the instapot and using an immersion blender to make a creamy soup.
I then added sweet corn niblets and diced potatoes and pressure cooked for another 10 minutes. OMG Awesome!! This is the soup I was looking for!!
